Features Spelt is a polyploid of wheat. It was an important agricultural product in parts of Europe from the Bronze Age to the Middle Ages. Today it is still grown in Central Europe, and it has reappeared in the market as a healthy food. Spelt wheat contains approximately 57.9% carbohydrates (excluding 9.2% fiber), 17.0% protein and 3.0% fat, as well as edible minerals and vitamins.
